I find myself confused by the Culture Note on p. 125, agriculture terminology aside. I’m not able to follow the beginning where it discusses nuances of the formation and use of 米. Can anyone summarize? Is the first paragraph talking about the kanji 米 being a visual combination of 八 and 十 and 八?

This reading seems to switch topics abruptly. Still interesting! This is my favorite chapter in the book so far.

Yeah, but it’s more of a folk-etymology-slash-wordplay rather than the actual formation of the kanji. In its earliest form, it looked like this, a depiction of scattered rice grains:
