If I lose connection during reviews, then keep doing reviews while offline, then reconnect as I’m doing reviews, will Wanikani sync up the offline reviews once connection is re-established?

It depends. If you’re using one of the apps then it will do that, but if you’re using the website it doesn’t (I think? I just tested it and it seemed to work).

My anecdotal experience is, sometimes yes, sometimes no. I haven’t experimented on purpose to figure out what other factors are common to yes vs. no.
Not super helpful, I know, but I guess I’m saying it could count, but sometimes you’re out of luck.
