でしょう vs だろう

So the translation for both of these are both similar to “probably” translated. What exactly is the difference in the meaning/usage?

Politeness level. だろう is the plain version that corresponds to だ, and でしょう is the polite version that corresponds to です. So where it’s appropriate to be polite, you would use でしょう. And in some cases where grammar demands the plain form, だろう could be required.
