私は最近(さいきん）、バーチュアルYoutuber「キズナアイ」の動画（どうが）をよく見ます。彼女の動画はほとんど日本語（にほんご）字幕（じまく）があるから、とても分かりやすいです。また、かわいいです。
Genuine question here, I was trying to express that I thought I had gone crazy (since it was such an odd coincidence)-- is that how I would express that best? Or is there another way? Sadly I feel like I never get enough person-to-person practice 
It wasn’t a grammatical mistake or anything, but since I originally mentioned たのしいしいいですね, you’d usually response with ね like, はい、たのしいしいいです。or you’d say そうですね .

If you are talking about someone’s height: tall=背が高い, short=背が低い
案外 can be replaced with 意外(いがい)と

Ohh thank you for explaining. In that case, you could’ve said:
ぼくは自分の頭がおかしくなっちゃったのかと思った。
Though it’s not a common way of saying it in Japanese. Common phrases to express your surprise in that situation are:
ぼくは目を疑った。
信じられなかった。
Switching to English quickly to ask a question. Why do we remove the が there? Is it because I used ない so it makes the sentence more casual?
Also, I’m never sure … I heard that it’s more natural to use informal speech when chatting online, but I don’t know whether that’s rude in this context as you seem to use です and 〜ます. Which would be better for me to use?

You can write without です and ます for sure, but when I feel like the styles are randomly mixed, I tend to change it to match the style.
As for the sentence 見たこと が ないですよ。…GOOD POINT!
I said ネコすしもおいしそうだった。and you replied:
- 見たことがないですよ。
- 見たことはないですよ。
- 見たことないですよ。
I feel this is the case where both は and が are not suitable.
が was okay if your answer was:
ネコすしは見たことがないですよ。
or
見たことがないんですよ。
I’m afraid I don’t have a good explanation for it at the moment. が vs は are very tricky. Hopefully we’ll write an article about it someday…(T__T)ごめん…
