If I remove my payment information off WaniKani, will my annual subscription be stopped?
Since it’s a recurring payment, your subscription should remain until the current payment period ends next year. So no, it shouldn’t be until next year. It probably says somewhere, but I’m not 100% on this.

It won’t cancel your remaining time.
(And it won’t renew later, if that’s what your asking)
And if anything ever goes wrong with your subscription, the staff at Wanikani are super helpful.
