五月から日本語が勉強しました。
Very unsure about that last sentence, want to say “I have been studying Japanese since the start of May”. Though I don’t know how to say at the start of a month. Don’t think the tense is right either, as it, I think, is implying that I studied but am not studying currently.
With lists using も implies also this and this but not exclusive to, kind of hinting there’s more but these are what I want to bring to attention, right? Whereas using と is specifically only these things?

Another way to say it: 歯医者ですか？

You can use や instead of と、it gives a meaning of etc Noun-related Particles – Learn Japanese
I think the message comes across. I would say 今年五月 日本語 初めて 勉強にします which translates to “i started studying Japanese in this year’s May” (well i hope) (welp my English sucks too)
“五月の始めから日本語を勉強しています” specifies the start of May. 
Also, that’s a bit too specific, and it sounds a bit weird.
