I learned that katakana typically uses a dash to extend vowel sounds as opposed to adding a vowel as in hiragana, but I found out that Kirby’s name is written as カービィ. Is there a difference with カービー or is it just a case-by-case thing?

Apparently, it’s so it’s Kirby instead of Kirbi, which is what I thought.
But there’s not really much else in that answer.
