The sentence you wrote works, but you can make it more native-like by making some changes. First, you can either omit 髪が or say 私の髪は instead of 私は、髪が. Second, you can say ミディアムの天然パーマです or ミディアムで天然パーマです instead of ミディアムと天然パーマです.
I suggest you combine the first two sentences and say 長めのまきがみです. To answer your question, I would say 冬は黒くみえるけど、夏はとび色にみえます. You can also say 私の髪は夏は黒っぽいけど、夏は茶色っぽいです. 〜っぽい is the suffix to add the meaning “-like” or “-ish”.

波打つ髪 is not wong, but not a common expression either. I would use くせ毛 for “hair with a natural wave”. You can use it in a context like うねうねしたくせ毛 or うねったくせ毛. うねる is the synonym of 波打つ here. Other sentences are very good, but it is more native-like if you say 似合っていると思います instead of 似合うと思います.
