What is this kanji?

Context: 「茹で上がったら冷水でさっと(that kanji)れば立派な冷やしうどん」

It’s so foreign to me that I don’t know how to type it. I also can’t seem to find it in dictionaries that allow you to search by drawing it out.

Looks to me like the 〆 in 〆切, so an alternate form of 締める.

Thanks! I guess that also explains why I couldn’t find it by stroking it out because I didn’t know it had the “loop” on the left.

What’s the word though? The only thing I see for 〆る is Jisho.org: Japanese Dictionary. Unless it can also be used for other meanings of 締める (and can be used in place of 締め in general).

Actually in your screenshot it’s 乄. 〆 is an alternative form. That’s why there is no visible loop.

It can. As you can see in the Wiktionary link I posted, it’s used as an abbreviation of 締め.

It fits. The original text is 〆れば which sounds like the ば form of 〆る.
