The kanji for carrot (人参) is forking weird

Does anyone know why it is the way it is? It’s like the kanji for human and the kanji for participate, right?

I wonder if the use of 参 isn’t a kanji replacement (for 蔘, which is the same but with the herb radical)

Even if not. A kanji for “luxurious growth of grass” is just a wonderful thing!
