A lot of the vocab in WaniKani are listed as both a noun/adjective, and since nouns and adjectives are (obviously) treated differently in Japanese, how do I treat these vocab? Nouns? Adjectives? Both?

The so-called な adjectives are adjectival nouns. Nouns that become adjectives when they are followed by な. Without な, they function as normal nouns.
