That is awesome, and I will knit something like it, partly because it has few stitches. Somewhere in the middle would be ideal for a scarf.
The actual 8x8 is pretty cool, and is worth doing just for the challenge.
Hmm, that polygonized crabigator was done with the crystalise filter in Photoshop, but probably isn’t a suitable process for making something for knitting, because there isn’t a clear row structure.

Just for fun, I tried running the Regular Durtle through the crystalisation process and found that the largest pixel size I could get with it being kind of abstract recognisable (in the same style as the crabitator) was about 84px

That would be alot of knitting with real small needles …

Hmm, 16x16 is a tiny bit more clear as a Durtle, but it’s still hard to get any kind of feature in like hair, arms, etc. The trickiness with only using two colours is that you can’t get any depth at all to make distinctions between various areas.
When I do my little pixel art keyboards, I’m able to add depth with colours, which, as you can see, helps very small things be more identifiable. Understandably impossible for knitting though.

I came up with this 8-bit Durtle:
I used basic 8-bit colors, meaning I could render this using the VGA controller, so most old systems should be able to render it.
Mosaic very quickly becomes just very blurry looking, rather than abstracted. This is at a cell size of 34, whereas crystalise ended up over 80.
