What is the difference between (登山) and (山登り) ?

The fundamental difference is their etymology. 登山 comes from the Chinese readings of 登 and 山 (onyomi), while 山登り comes from the Japanese readings (kunyomi).
Some people might decide on shades of usage difference, such as elite climbing falling under 登山, but there’s nothing about the words that makes them that way.
If you’re just an average person climbing an everyday mountain you might see around Japan, either one would be fine, I’m sure.
