To make it fair, try to keep it to terms that have kanji (even if the kanji forms are uncommon).
Mine include:
札幌 (さっぽろ, Sapporo)
値引き (ねびき, discount)
初心者 (しょしんしゃ, amateur)
秤 (はかり, scale)
餃子 (ぎょうざ, gyoza)
蕎麦 (そば, soba)
味醂 (みりん, mirin)
取り消す (とりけす, to cancel)
I’m not using WK anymore so it doesn’t bother me but, I would say 郷愁 (きょうしゅう ; nostalgia, homesickness). It is in my opinion one of the prettiest and most elegant words of the language, with the kanji 愁 composed of the radicals heart/mind and autumn 
I largery prefer it to the english loanword ホームシック.

honestly it might sound stupid but that’s one of the multiple reasons I stopped using Wk, I just never liked these kind of gross / weird mnemonics and the fact that besides all the made-up “radicals”, there isn’t any info about the true semantic / phonetics radicals of each kanji
But of course it can work for a lot of people and more power to them, I just got to a point where I felt like it was the moment to move on
Interesting mnemonic, you gave me the push to check out the kanji on the Kanji Study app with the Outlier dictionary and apparently this is the official etymology :
“郷 depicts two people in a kneeling, sit position and facing each other […] around a bronze bowl […] and enjoying a meal, which is also its original meaning. All of the components in the modern form are empty.”
The meaning apparently evolved like that :
Always interesting to know the true etymology of a kanji even though of course personal mnemonics work sometimes much better
With the kanji 愁 I also like these two :
旅愁 【りょしゅう】: loneliness on a journey
孤愁 【こしゅう】: profound loneliness
Love these words too, not on WK either :
才色兼備 【さいしょくけんび】: (a woman) being gifted with both intelligence and beauty
花より団子 【はなよりだんご】: function over aesthetics, dumplings over flowers ; this one is a full expression rather than a single word but I really like it the original goal of Hanami is to look at the cherry blossoms, but when people are sit below the flowers and having a picnic with friends, they become much more interested by the dango and the other delicious food they brought with them !
別腹 【べつばら】: dessert stomach, having room for dessert despite being full ; literally “another stomach” because the first one is already full
閉月羞花 【へいげつしゅうか】 : charms of a uniquely beautiful woman, great beauty, (so beautiful that) the moon hides and flowers are abashed
線香花火 【せんこうはなび】: toy fireworks, sparklers
花吹雪 【はなふぶき】: falling cherry blossoms, storm of falling cherry blossoms ; like a snowstorm
雪月花 【せつげつか】: snow, moon, and flowers, beauty of the four seasons
