Have you checked out NHK Easier? It’s like NHK news easy, but the sentences are much easier. I’ve been using that to practice, you can toggle furigana, and you can hover over words to see what they mean.

Graded readers may be a better starting point for you, with very simple sentence structures in the lower levels. The idea behind them is to read a lot of material at your level with the occasional new word/grammar item without looking anything up in the dictionary, and you will gradually absorb and improve your grasp of the language.
Free graded readers lvls 0 - 4 here. Note only the first two lvl 0 books are ‘official’, but the others are ‘approved’ as they have been listed on the website.
You can ‘join’ the Graded Readers and Parallel Texts “Book Club” where others are happy to help you with any questions you may have.
