hello! very late to this thread. ive been wanting to start this for a while but i dont really know how to start and what kind of things to write about that wont take me an hour and searching through dictionaries to complete, does anyone have any suggestions 
mini backstory for context:
- started wk between school years and did for a long summer, daily
- stopped for 2 years to focus on school
- graduated and took gap year, did it daily
- went to uni and then stopped again…but did a japanese class (with no kanji, level A2, was pretty simple but i struggled as i still forget sentence structure and find speaking hard)
so based on this what would people recommend to start out? japanese still feels very foreign to my brain, and id like to improve that and it feel more second nature

Welcome!
You’ll probably need to find a grammar resource; I used the Genki textbooks. You can start out as soon as you want by working through the book and making short sentences with the grammar that they teach you. ( X は Y です and so on) Once you know more grammar it’ll be easier to naturally start making more complex sentences and talk about different topics.

今日、私は たくさん読みました。この大学の本はいいですけど、英語で書かれます。アメリカの英語でわありません、むずかしいイギリス英語です！
新しい言葉を学べました: 「draughtsmanship」。それはアメリカの英語で 「draftsmanship」。
PS. Can somebody tell me how I can do this blurry filter over sentences? So you have to tap it once, to see it?

I would also recommend going simple to begin with. Choose one type of sentence Struktur and just write three sentences a day using it.
Like: „My Desk is heavy.“, „The flower is red.“ „The book is good.“
Then you can upgrade: „The book was good.“ (Past)
Then you can tackle Verb-sentences: „I go to school.“ „I go to work.“ „I go to my fiend.“ and so on.
When I have written some sentences, I tend to put them into deeple or translator and have them translated into my mother language, to see if i wrote something i didn’t mean to write. It’s not perfect, but it is an quick way to check for mistakes.

朝に9時に大学に到着しました。こうぎは11時まで始まりません。大学で朝ごはんを食べました。チーズボレックとココア。その後私は教授たちにメールたちを書きました。
こうぎの後 私は家に帰りました。まずちゅうしょくを作り、それからアルバイトに行きました。

I arrived at the university at nine in the morning. The lecture does not start until 11.00 am. I had breakfast at the university. Cheese Borek and cocoa. Afterwards I wrote emails to my professors.
After the lecture I went home. First I made a lunch, then I went to my part-time job.
It was another busy day.
