こんな夢を見た。I had a dream.
This is from some short story and I also heard 夢を見た for “I had a dream” in some anime. I know that 見る has several meanings: to view, to observe, to try, etc… But in this context, what is the best meaning for a literal translation of 夢を見た?

夢を見る is just how the idea of having a dream (while sleeping) is expressed in Japanese. I don’t think there’s much benefit in trying to force the English translation into “I saw a dream”, since we never really say that (not that I’ve ever heard at least).
夢がある or 〇〇は私の夢です etc. tends to be used for dreams in the figurative sense, like “I have a dream to become a great doctor someday.”
