That (secret) is inserted lactic acid bacteria.

Lactic acid bacteria is small living thing that is invisible to the eye, but when the lactic acid is replaced with the lactose from inside milk, it is able to transform into yogurt.

Lactic acid bacteria are invisibly small living things, but they can transform the “lactose” in the milk into “lactic acid” and make the milk turn into yogurt.

I’m probably jinxing it but these sentences were satisfying to translate. I was sure the second one would pose problems but it was actually really clear what it was saying, at least once I realized that I had accidentally written I couldn’t figure out what skiing moguls had to do with milk and yoghurt (almost foiled again by katakana).

That thing (small mystery) is to put in “lactic-acid bacili”.

Lactic-acid bacili is a small living thing, not visible to the eye. It replaces the lactose in milk with lactic acid, and is the reason the transformation to yoghurt is possible.

This transformation is called fermentation

When milk ferments, it is said to become yogurt that is a little sour and smooth.

There are various foods that depend on fermentation to be made, such as miso, soy sauce, natto, bread, cheese, etc.

The same goes for the alcohol of beer and wide that adults drink.

This transformation is called “fermentation”.

Milk ferments, and turns into a slightly sour and smooth yoghurt.

(I was a bit confused as to the meaning of いうわけです here.)

Fermentation is used in making various other foods, such as miso, soy sauce, fermented soybeans , bread and cheese.

Adults also drink alcohol such as beer and wine, don’t they.

This transformation is also called “fermentation”.

When milk is fermented, (I say that) it becomes a slightly sour and smooth yogurt.

There is furthermore various other food made by fermentation, like miso, soy sauce, natto, bread, cheese, etc.

It is also true for adults’ drinks like beer, wine and also sake.

I don’t know whether it is correct, but I prefer sake to pure alcohol in the last sentence (tastes better )

I’m assuming this bunpro page can sort of be applied to というわけです.

It is said of adult drinks like beer, wine, and even sake.

I also was using this page for そうです. I’m always hesitant to add to the vocab sheet since I’m not sure if stuff is obscure enough to warrant it or not.

I thought it was referring to the alcohol in the beer and wine itself, but now I’m not sure.

I read the whole thing as modifying the word alcohol. So, “alcohol such as wine or beer”.

I’d just go ahead and add them. The main thing is not adding a word when your uncertain it’s the right translation, as that can throw others off if you’re wrong.
