What to do alongside WaniKani? Immersion and reading?

I am a complete beginner who started learning Japanese last year. I purchased a year sub to WaniKani in December and am currently on a 32 day streak.

I’m also working through (and struggling with) the Kaishi 1.5k deck on Anki which I started before WaniKani. I’ve been pairing this with the Japanese From Zero! 1 textbook.

Has anybody got any recommendations for very basic reading and immersion as I feel like I don’t do any?

I think at the point you are at, the most important part is now, that you get your vocab and grammar studies - for which you already have tools - into an orderly scheme. Most content will still be very hard to process, particularly since Japanese From Zero! is focussed on basic communication in the beginning, which will not typically happen in very simple content.
My first reading content was NHK easy News. Since you can toggle Furigana, you should be quickly able to read it, even though understanding will take some time. However, since the articles are short, you can also dissect some completely, if you have the time.
While I did not do it, when I started, probably listening is something you should be putting a lot of work into, if you are not in a classroom setting. For starting out, maybe try some very basic podcasts like “Nihongo con Teppei Beginner”. Though honestly even that was hard for me early on. However, just getting used to the language can be very helpful in this stage. So just consuming japanese content with subtitles is also valuable, though it should in my opinion not be seen as a part of studying, but rather replace some of your freetime.
You might also want to look into Shadowing practice, though I feel not everyone likes it, but it helps with catching and producing the right sounds.

And otherwise, it is important to constantly test your boundaries and see what kind of content you can confidently consume at your current stage, but also see what kind of things remain challenging.

I have been listening to Sakura Tips and Nihongo con Teppei from very early on. I still don’t understand most of what’s been said but I use it as exposure / immersion to the language whilst I walk the dog. Thank you for the NHK Easy News recommendation I have it bookmarked now :). I did also try the anime with Japanese subtitles approach but found it a bit dull not being able to understand anything. Something I will probably have to push through eventually.

Well, a lot of people here, including me, started reading somewhere around level 18-20, so I’d recommend concentrating on grammar and kanji until you get to that point.
However, different people are different.
If you want to try to get into reading, I’d recommend

  1. Tadoku graded readers:

The readers are graded form Grade 0 to Grade 5 with Grade 0 being the easiest

That’s already great!
I think, as long as you are aware, that it is not proper listening exercise, you can even use anime with english subtitles. Again, mainly for getting used to the language and, picking up some words that you can associate to what is happening. The japanese subtitles come more into play, if you want to use it as an actual practice session, in my opinion.
