Is there some tool out there where I can copy and paste a large selection of Japanese text and it will analyze the text and tell me how many unique kanji are in the text?

This may not be quite what you are looking for, but have you used ichi.moe? It parses Japanese text.
Otherwise, it would be an simple program to write in just about any language that easily works with text files β¦
And I think the person that has the utility for making SRS cards for vocabulary from books has such a thing, but you would need to search around for discussion of it, and my own brain is not working the best right now β¦

Just make sure you know which encoding the text file is in or itβll go crazy.
