冬の冷たいアイスも大好き。
Trying to read this sentence, it looks to me that there should be a particle after 冬の冷たい. Am I right? I assume the sentence means something like: I love ice-creams as well, despite the cold of the winter.

冷たい is modifying アイス, so there really isn’t any room for a particle there.
冷たい is not related to “the cold of winter” because atmospheric cold is expressed with the word さむい.
There is a pattern of [season]の[food] throughout the book. In this case the food also had an adjective modifying it.
So, the meaning would be, then “I love the cold ice-creams of the winter as well”. ¡Great! Thank you very much.
