I keep hearing it in anime and genki said that it says probably but I don’t think that’s how it’s used. Can anyone care to explain it to me

As with @Leebo’s examples, the easiest translation in conversational Japanese is thinking of だしょう／だろう as “~right?” at the end of a sentence.
As for more formal situations, it’s more convenient to think of it like Genki and the rest suggest: probably / likely. Just watch a Japanese 天気予報（てんきよほう, weather forecast）to hear loads of でしょう。
最高気温は千葉では２８度でしょう。
さいこうきおんはちばでは２８どでしょう。
The highest temperature in Chiba will be 28 degrees.
明日も1日中暑いでしょう。
あしたもいちにちちょうあついでしょう。
The whole day tomorrow will most likely be hot as well.
etc. etc.
