I have a fairly simple question. Can I use 久しぶり when writitng a text message? Or is it only used when you meet someone face to face?

There’s nothing in the word that directly has to do with the associated action. It’s just noting a long time.
You could say something like 久しぶりにおすしを食べた (I ate sushi for the first time in a while) if you wanted.
So the answer is yes, you can use it in a text.
