緑がたくさん見えるの、いいですね By the way, 隣人 is a formal expression that isn’t really used in daily conversations. You can say となり近所の人 to refer to someone living next to your house. To refer to your neighbor in general, you can say 近所の人. More colloquial expression to say each is おとなりさん and ごきんじょさん.
いい眺めがないのはざんねんだけど、今のアパートが好きでよかったですね😌
By the way, if you want to say “I want better view outside my wondow”, it’s more natural to say もっといい眺め instead of それよりいい眺め.
I went out on a major limb with that last sentence. My intention was: "But, I think they’re pretty, so I like seeing them. I’m probably also abusing the は particle here - i’m still really shaky on where to use が in clauses like these. すみません!

バリ島でカイト時期です。たくさん風が吹きます。
日本語の言葉は「カイト」が何ですか?

熱中症に、気をつけてください I would say べつの話, not 他の事. You can also say これはあまり関係ないかもしれないけど to say “this may not be that relevant to the onging topic”.
I understand what you mean about reading sentences in Japanese is tough I recommend you this website. You can find “Prosody tutor Suzuki-kun”, which generates the audio of the sentences you type in the text box.
「夏がどこかへ行ってしまいました 」がまるっきりわかりませんでした。これは英語で「summer could not have possibly arrived (in your neighborhood, because of all the rain recently) 」と言うのようにと思います。正しいですか?
そんなに長い間、雨がふらなかったんですね It would be “summer has disappeared somewhere” if I translate the Japanese sentence literally. In my home town, it was hot for a few days at the beginning of Jun, but it became rainy later in the month. So, I feel summer is already gone
